The Goods

  1. Bayou-Spiced Rockfish with Southern Succotash and Crispy Roasted Potatoes.

For this meal, I sliced and roasted the potatoes first. For the succotash, I shucked the corn, halved the tomatoes, and cut the green beans into ½ inch pieces. I added those ingredients to a hot pan of oil for 4 minutes, seasoned with salt and pepper, and set aside. To cook the rockfish, I heated 1 tbsp of butter on the same pan I just used. I dried the rockfish and seasoned it on all sides with bayou seasoning, salt and pepper. I cooked the fish 3 mins per side until opaque.

This meal was by far the tastiest of the meals in this box! Me and my boyfriend both LOVED it, the fish was cooked perfectly and tasted amazing. The succotash was delicious as well, and the potatoes! All around a great meal.

  1. Smoky Adobo Chicken Tacos with Mango Slaw and Lime Crema.

For this meal, I began by making the lime crema with sour cream, lime zest, salt, pepper and a squeeze of lime juice. For the mango slaw, I tossed together the mango (peeled and cut into matchsticks), red onion (halved, peeled and finely chopped), cabbage, juice of the remaining lime, salt and pepper. Next I butterflied the chicken breasts and seasoned them with salt and pepper on both sides and rubbed on 1 tablespoon of adobo sauce. I wrapped the tortillas in a moist paper towel and microwaved them for 30 seconds and plated the dish, adding the extra slaw on the side.

My boyfriend and I were not impressed with this meal. Slaw on a taco just wasn’t very good, plus we both don’t like slaw. We still both finished all of our tacos. Mango slaw IS better than cole slaw, but we still agreed it was not the best.

  1. Jamie’s Beef Kofte with Herby Couscous Salad.

For this meal, I began by putting a pot on to boil and working on the beef kofte. I chopped the lettuce in to large diagonal pieces. For the kofte, I picked the thyme leaves into a bowl, then added the beef, garam marsala, salt and pepper. I combined the mixture into 4 oval shaped portions. I began to heat ½ tablespoon of olive oil in a pan on high heat, and cooked the beef kofte for 5 minutes on each side. For the couscous, I poured 1 cup of the boiling water over it and covered that with a plate and set aside. Next I peeled and coarsely grated the onion into a bowl. Then I sliced and seeded the cucumber and grated that into the bowl as well. I seasoned this well with salt and left alone for 2 minutes and squeezed the extra juice out of the mixture, and added half the lemon juice and added pepper. To finish the couscous I halved and seeded the chili and picked the leaves from 3 sprigs of mint. I finely chopped it all together, fluffed the couscous with a fork, and added the mixture as well as more olive oil and salt and pepper. I stirred half of the roughly chopped tomatoes into the couscous as well. After this, I finely chopped the remaining mint leaves and added them to a bowl with the yogurt and a squeeze of lemon juice to make the minty yogurt.

My boyfriend and I once again did not like this meal. The huge chopped salad pieces were weird to eat (why not cut it into salad lettuce sized pieces?).  Ten minutes on high heat cooked the beef kofte WAY too much, they turned into crispy little turds. The mint yogurt tasted like minty yogurt which was not good, I was hoping it would taste more like a creamy salad dressing. We still ate everything but the lettuce, but agreed it was not that good.

A HelloFresh subscription is $69/week for 3 meals and two people. I think 3 home cooked meals with fresh and unique ingredients would cost about the same or more if I bought everything from the grocery store, so if you grocery shop weekly as I do, the money you save on groceries is about what you’ll be paying for the subscription. For me it’s more about the variety of ingredients and getting to try lots of new things that makes this preferable to cooking all my own meals. I always feel good about myself after making a fancy meal and also enjoy impressing my boyfriend! If you like to cook and try new things, you should give this a try.
