- Salmon with Tomato-Ginger Chutney and Cardamom Rice
This meal was gluten, dairy, and soy free. To begin, I put the rice and cardamom together in a pot with water to boil. While the rice cooked, I made the chutney and salmon. For the chutney, I chopped the shallot, garlic, ginger and mint leaves. I warmed 2 tablespoons of oil and added the shallot, garlic, and ginger. Once the shallot was soft, I stirred in the tomato paste, 1/4 cup water, diced tomatoes, brown sugar, and rice vinegar. I let this mixture simmer for 17 minutes while I cooked the salmon. For the salmon, I rubbed each piece with oil, salt, and pepper and put the salmon fillets in the oven for 12 minutes. Once everything was cooked and ready, I plated the dishes.
Me and my boyfriend both loved this meal. The brown sugar added the perfect amount of sweetness to the chutney and the chutney, rice and salmon went great together! I tried to make sure I got all three in every bite, lol. I am saving this recipe so I can make it on my own some time as well! This meal took 35 minutes from start to finish.
2. Shrimp Piccata
This meal is soy and gluten free, as well as paleo. To begin, I prepped the ingredients (chop, mince, grate all the produce). Once everything was ready, I tossed the shrimp in a baking dish with capers, shallot, garlic, lemon zest and juice, and half the parsley. I dotted the shrimp with butter and put in the oven for 20 minutes. While the shrimp cooked, I put the almonds in the oven to toast and began the salad. For the salad, I put the green beans on to boil and used remaining ingredients for the dressing. I combined the dill, sherry vinegar, and 2 tablespoons of oil in a mixing bowl, and then tossed this mixture with the green beans, tomatoes, and almonds. Lastly, I transferred the picatta to the plates and served with the green bean and tomato salad on the side.
This meal was delicious! The shrimp were cooked perfectly and the capers, lemon and garlic together formed a delicious symphony of flavors! The green beans were fresh and crisp, and the tomatoes were ripened to perfection. Once again, we cleaned our plates! I wish there had been more shrimp, they were pretty small and we only had 9 each. This meal took about 20 minutes total.
3. Steak and Eggs with Tomato-Cauliflower Rice
For this meal, I prepped the ingredients first, luckily I had veggie scissors that chop produce into a bunch of tiny pieces at once, because I had to cut an entire head of cauliflower into rice sized pieces! With the scissors this took about 5 minutes. I warmed oil in a pot and added the shallot, cooking until soft, and then added cauliflower and paprika. Once the cauliflower was soft, I added the diced tomatoes, tomato paste and 1/4 cup water and let it simmer while I finished the rest. Then I cooked the steaks until they were medium rare and set them aside. For the eggs, I cracked them in to the same pan as used for the meat and let them cook until the whites were set and the yolks were still runny. I plated the steaks on the tomato-cauliflower rice, and topped with the eggs.
This meal was crazy good!! I’ve never tried steak and eggs before because I thought it sounded funny, but man it was so amazing. The tomato-cauliflower rice was so flavorful and delicious, the steaks were cooked to perfection, and the eggs added a unique “breakfast-y” flavor. We both ate it all and then finished off the leftover cauliflower rice. The whole meal took about 25 minutes.
Sun Basket costs $68.94 the first week of a 2 person plan, and is $74.93 from that point on. The only other organic meal kit service I’ve tried is Green Chef, which was about $80/month for 2 people. So if you are sure you want organic food only, Sun Basket is probably the cheapest you’ll find. I love that they also offer Gluten-Free, Paleo, and Vegetarian boxes… something for everyone!
