Pan-Seared Pork Chop with Onion Gravy, Broccolini and Rosemary Mashed Potatoes
For this meal, I began by peeling and boiling the potatoes and putting the broccolini in the oven to roast. Next I chopped the onions. Then I seared the pork chop on both sides and put it in the oven with the broccolini. For the onion gravy, I put the onion and half the rosemary in a pan with olive oil and added butter, flour, and stock concentrate until thickened. Lastly, I mashed the potatoes with milk and the remaining rosemary and plated the dish.
It looks kind of funny, I think because my gravy never turned brown. It was a pink hue for some reason lol. It was still good though, the pork chops were great, they were tender and had minimal fat. The rosemary potatoes went great with the pork chop and the broccolini was crispy and delicious!
2. Teriyaki Chicken with Baby Bok Choy and Coconut Rice
For this dish I began by boiling the rice in coconut milk and water. Then I chopped the bok choy, minced the garlic and ginger, and cut the chicken into strips. For the teriyaki sauce, I combined honey, soy sauce, garlic, ginger, and water. Next I cooked the chicken and set it aside and then cooked the bok choy in the same pan. When the bok choy was ready, I added the chicken back to the pan along with the soy sauce and cooked until the sauce was thickened and the chicken was done. To finish I plated the rice, then the chicken and bok choy, and sprinkled with remaining sauce and cashews.
This meal tasted amazing! The teriyaki sauce was so sweet and salty, I loved it. The chicken was super tender and the rice!! The rice was the best part! I think I’m always going to cook rice in coconut milk from now on because it really added a wonderful flavor to the dish.
3. Cheesy Meatball Subs with Herby Marinara and Crispy Broccolini
I started by chopping the onion, garlic, and basil leaves. To make the marinara, I cooked garlic and onion in olive oil until soft and set half of it aside. I added crushed tomatoes, water, basil, and italian seasoning to the half in the pot and let it simmer. To make the meatballs, I used half the onion mixture, ground beef, and italian seasoning. I combined everything with my hands in to 12 balls and added them to the marinara mixture. Next I roasted the broccolini as the meatballs simmered. With 3 minutes left for broccolini, I put the po boy rolls in and let them toast as well. To finish, I put the meatballs with marinara on the rolls with some lemon and a basil leaf, and plated it next to the broccolini.
This meal was FAN-TA-STIC! Me and my boyfriend both cleaned our plates and wished we had more to eat! I could have eaten two of the subs they were so good! I think I might buy the ingredients and make them on my own some time, lol.
