The Goods

1. Paprika-Rubbed Chicken with Barley, Tomato, and Avocado Salad.

For this meal, I first put the barley in a pot to boil and cook while I made the rest of the meal. For the salad, I chopped up avocado, cucumber, tomato, and scallions. Once I had everything in a bowl, I tossed them with balsamic vinegar and salt and pepper. The recipe suggests cooking the paprika chicken in a medium pan, but I used my George Foreman because it is so fast and easy. Once the barley and chicken were both finished, I added the barley to the salad and tossed with balsamic and a drizzle of olive oil. I spooned half onto each plate, thinly sliced the chicken, and put the chicken on top.
This meal was pretty good. I love balsamic vinegar on anything and it really made the salad. I’ve never had barley before, that I know of, and I thought it was great. I wonder why people don’t use it more often? I love how much variety this meal had! With the barley, the creamy avocado, the crunchy cucumber… I love texture in my meals and this dinner had it all. Plus, it only took about 30 minutes. Yum!
2. Pan-Seared Steak with Herb Butter, Roasted Potatoes, and Green Bean Saute.

For this meal, I began by cutting the potatoes, mincing the garlic and parsley, and trimming the ends of the green beans. Then I put the potatoes in the oven with olive oil, salt, and pepper to roast. The recipe suggests searing the streak on the stove top before placing it next to the potatoes in the oven, but I seared mine on my George Foreman (2 sides at once = half the time). I put the seared steak in with the potatoes and cooked the green beans on the stovetop with garlic. For the herb butter, I mixed Dijon mustard, butter, parsley, salt, and pepper. Then I plated the green beans and potatoes. For the steak, I thinly sliced it and added half to each plate, with the herb butter on top.
This meal was by far the easiest meal I’ve EVER made by a meal delivery box. Once the ingredients were prepped, the rest of the steps were a breeze. Put potatoes in oven for 24 minutes, seared steak in George Foreman for 3 minutes, put it in with potatoes, mixed up the herb butter, and relaxed for 15 mins until there was 5 minutes left on the timer and cooked up the green beans. I usually don’t get a second to relax with these meals and I had 15 minutes of free time cooking this! Woohoo! The green beans were beyond fresh and the steak was SO tender. The meal was great :).  Also, it only took 10 minutes of actual cooking to make.
3. Thai Pork Laarb Burger with Cucumber-Mint Salad.

This meal was incredibly unique… by the picture, I thought it would be like a regular hamburger with some funky Thai spices, but it was so much more than that. For one, the actual patties are made by mixing ground pork, lemongrass, lime zest, shallot, soy sauce, Thai seasoning, sriracha, salt, and pepper. The mayo is sriracha and lime juice mixed with mayonnaise. The “salad” is shaved cucumber, mint, lime, oil, salt, and pepper. So in other words, this was not your mom’s hamburger.

Me and my boyfriend both loved the burger, there was so many awesome flavors it was unbelievable! We also both did not particularly fancy the cucumber salad. It’s not that it was bad, per se, it was just too different from regular salad. We ended up having some rice and regular salad we had at the house for our sides. This meal took about 35 minutes.

A HelloFresh subscription is $69/week for 3 meals and two people. I think 3 home cooked meals with fresh and unique ingredients would cost about the same or more if I bought everything from the grocery store, so if you grocery shop weekly as I do, the money you save on groceries is about what you’ll be paying for the subscription. For me it’s more about the variety of ingredients and getting to try lots of new things that makes this preferable to cooking all my own meals. I always feel good about myself after making a fancy meal and also enjoy impressing my boyfriend! If you like to cook and try new things, you should give this a try.
